Nong's Chicken Tacos with Pineapple Salsa
Mix up your next Taco Tuesday with a twist on the classic. Nong's Khao Man Gai Sauce pairs perfectly with a fresh pineapple salsa, bringing exciting (and delicious) new flavors to taco night.

Ingredients:
- 2 tbsp olive oil
- 1 lb bonless skinless chicken thighs
- Salt, to taste
- Ground pepper, to taste
- 1 sprig fresh thyme
- 1 sprig fresh oregano
- 1 small onion, diced
- 2 tbsp fresh ginger, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp Sichuan pepper
- 1 tsp smoked paprika
- ¼ cup Nong’s Khao Man Gai Sauce
- 1 cup chicken stock
- ½ tbsp lemongrass paste
- Hard or soft taco shells
- Lettuce for topping
For the Salsa:
- 1 cup fresh pineapple, diced
- 1/3 cup red bell pepper, diced
- ¼ cup red onion, diced
- 1/8 cup green chili, diced
- 1/8 cup cilantro, chopped
- 1 tbsp lime juice
- Salt, to taste
- Ground pepper, to taste
Directions:
- Add your oil to a nonstick skillet or cast iron and bring to med-high heat.
- Place the chicken thighs into the skillet, along with the full sprigs of thyme and oregano. Do this in batches, if necessary.
- Cook the chicken for 5 minutes per side, seasoning with salt and pepper to taste.
- Remove chicken from pan and set aside. Discard the thyme and oregano.
- Add the onion, ginger, and garlic to the pan and saute for 5 minutes, stirring occasionally.
- Next, add the cumin, Sichuan pepper, and paprika to the pan, stir to combine, and cook for 1 minute.
- Add in the Nong's sauce, chicken stock, and lemongrass paste, stir to combine, and bring to a boil for 5 minutes.
- Meanwhile, slice the chicken into bite-sized strips. Then, add to the pan and mix well, cooking for 2 additional minutes allowing the sauce to thicken.
- For the salsa, combine pineapple, red bell pepper, red onion, green chili, cilantro, lime juice, salt, and pepper into a bowl and mix to combine.
- To assemble, layer in the lettuce, marinated chicken, and salsa to your taco shells.
