Fried Tofu with Vegetables

Ingredients:
- ¼ cup Nong’s Khao Man Gai Sauce
- ½ cup orange juice
- ¼ cup soy sauce
- ⅓ cup vegetable stock
- 2 tsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tsp chili sauce
- 3 tbsp honey
- 10 oz tofu
- 4 tbsp vegetable oil, divided
- 1 cup red bell pepper
- 1 cup yellow bell pepper
- 1 cup zucchini
- 1 cup frozen green beans
- 2 tbsp fresh ginger
- 2 tsp garlic
- 1 tbsp corn starch
- 2 tbsp water
- ¼ cup black sesame seeds
- ½ cup green onions
- cooked rice, for serving
Directions:
- In a small bowl, combine Nong's sauce, orange juice, soy sauce, vegetable stock, rice vinegar, hoisin sauce, chili sauce, and honey and mix thoroughly. Set aside
- Cut the tofu into 1" cubes and dry thoroughly with paper towels.
- Add oil to a skillet over medium-high heat and fry the tofu for 3-4 minutes, or until golden brown and crispy.
- Remove the tofu and in the same pan add a touch more oil if needed. Add in all the vegetables and cook for 3 minutes.
- Stir in the ginger and garlic and cook for an additional 2 minutes.
- Add in the sauce, plus corn starch mixed with water and cook for another 5 minutes, allowing the sauce to thicken.
- Mix in your fried tofu and top with black sesame seeds and thinly sliced green onions.
