Farmers Market Brunch Eggs
This quick and easy breakfast is even better with fresh produce and eggs from your local farmers market. It's a perfect (and healthy) weekend brunch option!
Makes 3 servings.
Ingredients:
- 1 bunch of rainbow chard
- 1tsp dice shallot
- 3 eggs
- ¼ cup Nong’s Khao Man Gai Sauce
- oil
- salt and pepper to taste
Directions:
- Wash and dry fresh rainbow chard. Strip the greens from the ribs and set aside. Chop the ribs and dice the shallot. Loosely chop the greens.
- In a hot pan drizzle oil and add the shallot and chard ribs. Cook to tender then add the greens, lightly turning to cook evenly. Drizzle Nong's sauce over the greens.
- Clear a nest in the center of the greens and break the eggs onto the pan. Sprinkle all with salt and pepper. Cover and cook until the eggs are just set. Serve with bread.
