Dinner Party Scallops
Enjoy this tasty scallop and asparagus dish any night of the week. It just takes a few minutes to prep and cook, and cleanup couldn't be easier.
- 8 large scallops
- 1 bundle asparagus
- ⅓ cup mayonnaise
- ¼ cup Nong’s Khao Man Gai Sauce
- olive oil
- salt and pepper to taste
- Set your oven to 475*. Clean and trim asparagus. Toss in oil on a sheet pan and arrange into “rafts” of 4-5 stalks. For each raft, Slice two scallops in half horizontally and arrange them over the asparagus. Season with salt.
- Mix together the mayo and Nongs in a small bowl. Bake scallops and asparagus for 3 minutes.
- Remove from the oven and apply the sauce evenly over all of the scallops. Return to oven for 6 minutes. Garnish as desired
