Thai Chicken & Rice

Makes 4 - 5 Servings
Ingredients Part One - Chicken:
- 4 quarter legs of chicken
- 8 cups of water
- 1 tsp salt
- 2 tsp sugar
- 1 whole garlic
- 1 cup of ginger
- 3 pandan leaves (optional)
Ingredients Part Two - Rice :
- 1 cup of chicken skins (will make about 2 tbsp of chicken fat)
- 2 tbsp of chopped garlic
- 1/3 cup of chopped shallots
- 1/3 cup of minced ginger
- 3 cup of jasmine rice
- 3 cup of chicken broth
- 3 pandan leaves
Ingredients Part Three - Soup:
- 4 cups of chicken broth
- 2 cups of Chinese winter squash
- 2 tbsp of soy sauce
- 1 tsp of ground white peppers
- 2 tbsp of chopped cilantro
- 2 tbsp of chopped green onion
