Makes 4 - 5 Servings 

Ingredients Part One - Chicken:

  • 4 quarter legs of chicken
  • 8 cups of water
  • 1 tsp salt
  • 2 tsp sugar
  • 1 whole garlic
  • 1 cup of ginger
  • 3 pandan leaves (optional)

Ingredients Part Two - Rice :

  • 1 cup of chicken skins (will make about 2 tbsp of chicken fat)
  • 2 tbsp of chopped garlic
  • 1/3 cup of chopped shallots
  • 1/3 cup of minced ginger
  • 3 cup of jasmine rice
  • 3 cup of chicken broth
  • 3 pandan leaves

Ingredients Part Three - Soup:

  • 4 cups of chicken broth
  • 2 cups of Chinese winter squash
  • 2 tbsp of soy sauce
  • 1 tsp of ground white peppers
  • 2 tbsp of chopped cilantro
  • 2 tbsp of chopped green onion
