Chicken Skewers with Green Sauce
Spring onion and garlic come together to make this grilled dish burst with fresh flavors. The marinade for the skewers is delicious on it's own, but combine it with the green sauce and you'll have changed the game.
For the Skewers:
- 2 lbs chicken thighs
- 4 oz spring onion
- 4 garlic cloves
- 1 tbsp chopped ginger
- ¼ cup Nong’s Khao Man Gai Sauce
- salt & pepper, to taste
For the Green Sauce:
- 1 spring onion top
- ¼ cup cilantro
- 1 garlic clove, minced
- ½ tsp salt
- juice of ½ lime
- 1 tbsp olive oil
Directions:
Cut the chicken thighs into 1" chunks. Combine spring onion, garlic, ginger, Nong's sauce, and salt & pepper in a food processor and puree into a paste.
Coat the chicken with the paste and let marinate in a sealed container in the fridge for 30 minutes, or up to a few hours.
Meanwhile, combine all the green sauce ingredients into a food processor and puree until smooth. Pour into a bowl for serving.
Skewer the chicken and grill on both sides until cooked through. Serve with grilled flatbread and the green sauce for dipping.
